Ginger and Beer smoked game hens with smoked potato & hot pepper medley! Went great with Hunger hot sauce, Bourbon BBQ, and Cumin Crema. Add a few brewskis and it was a helluva meal!
These hens were marinated for 24 hours in ginger beer, chelado tamarind, onions, peppers, garlic, and thyme. Left to rest for an hour, stuffed with butter and thyme before tying, rubbed with yellow mustard and cumin citrus seasoning blend. Smoked for about 6 hours with apple, hickory, and mesquite wood chips over a small bed of charcoal briquettes, both direct and indirect heat because i was hungry and started late. the potatoes were blanched and then smoked with the hens with the strained veggies from the marinade. YUM
